These pancakes are honestly the best I've ever had!
Lemon Ricotta Pancakes with Lemon Curd & Fresh Raspberries
I found the recipe in the Parade Magazine,
and it's another Bobby Flay one, of course.
I whipped them together on Saturday morning
and everyone approved.
Preston & I devoured them and
couldn't stop oooing and ahhhing.
They are that good
and perfectly refreshing.
My favorite was the oozing lemon curd.
Preston's favorite were the creamy pancakes (fluffy and cheesy).
Bobby says they make the perfect Easter Brunch
but I'm thinking they'd make any day perfect.
Henry wanted nothing to do with the lemon curd or berries,
just syrup for him...
and secret spoonfuls of powdered sugar....
We didn't mind.
It just meant more of the goodness for us.
