I'm a lover of Mexican food.
Chips and salsa.
Bean and Cheese Burritos.
Cheese Quesadillas.
Mexican Baked Fish.
Pork Salad.
But, I've always struggled with Mexican side dishes.
I know the typical is rice and beans, but it's hard to make those authentic and tasty at home.
That's where I found my first favorite Mexi side dish.

My other favorite I was given by my sister, who equally loves Mexican.
It's Texas Two Step Slaw.
I know, you hate Cole Slaw, most do.
But this ain't your typical mayonnaise-ridden slaw.
It's fresh and ranchy.
Try it. You must.
I no longer struggle with what to accompany my tacos or burritos.
And, they can be healthy to boot!
