Preston hasn't let up on his love for cooking and his desire to try new recipes.
Especially since having Stella, he's picked up his game a notch and taken over the kitchen duties.
This week I was spoiled with...
The tomatillo salsa was sweet and divine. As was the southwest essence and Coke.
And we can't leave out the Swedish Pancakes with Blackberry Compote.
Preston's co-worker shared this gem of a recipe with him. It's from his Swedish Grandma who made these to perfection. They are perfection. Thicker than a crepe and thinner than a pancake, and just perfect to roll and top with fresh berry drizzle.
The Swedish Pancake Recipe...
3 eggs
1 scant cup of flour
1 C milk
1/2 t vanilla
1 T sugar
1/4 t salt
1 t butter (melted in pan and poured into mix)
Mix together to make batter. Cook in a heated pan, just like a pancake.
Slather it with butter and powdered sugar. Roll it up. Top with the Blackberry Compote.
Cook these up, or find someone (my hubby and he share the same apron...that's about as close as it gets) who will cook them for you.

You are one lucky girl! Mac and cheese is the extent of Tony's cooking. That is one thing I wish Tony could do so I didn't have to! I hate cooking right now.
You are blessed Jessie! I would be getting leftovers heated up, cereal, sandwiches, and breakfast food. Preston deserves 2 thumbs up!
yummy. fish taco's and breakfast foods are my absolute favorite!!! really.when they are made right, which it looks like they were. yay for preston. and lucky you!!!
