Asparagus Quiche
Ingredients:
1 lb asparagus, bottoms trimmed, cut into 1/2 inch pieces
1 refrigerated pie crust
4 eggs
3/4 C half and half
3 oz ham, diced
1/2 t salt
1/8 t nutmeg
1/8 t cayenne pepper
1/2 C parsley
4 oz shredded cheese
Directions:
1. Place a baking sheet on rack in lower third of oven. Heat to 425 degrees.
2. Bring a saucepan of salted water to a boil. Add asparagus and cook for 4 minutes. Drain and run under cold water. Blot dry on paper towels.
3. In large bowl, mix together eggs, half and half, ham, salt, nutmeg, cayenne pepper, parsley and half of cheese. Scatter asparagus and remaining cheese over pie crust. Carefully pour in egg mixture. Place on heated baking sheet in oven.
4. Bake at 425 degrees for 40 minutes. Cool briefly. Serve.
